Basically it is popular for lunch and dinner. If you’re thinking of going out to eat at restaurant during the weekend then this recipe is perfect for you. Veg Fried Rice is also very popular as a street food of India. It’s tasty to eat with gravy or Manchurian. But for those who eat meat, its taste doubles with chili chicken and chicken Manchurian.

Veg Fried Rice is the most popular dish in restaurant. Although it is prepared different ways in different restaurants, but taste is delicious in their own way. I did not used Ajinomotto in this fried rice, as used in restaurant. Without it fried rice will be very tasty and rice make it on high flame.

It is known that the first Veg Fried Rice originated in China. Veg Fried Rice is a very favorite food among the Chinese. However, its prevalence has gradually increased throughout the world. Everyone in the house, young to old, loves to eat Veg Fried Rice. The Veg Fried Rice is known as “Ghee Bhaat” to Bengali food lovers.

This recipe is wonderful for everyone in the family. At home, in any big or small celebration like birthday, wedding anniversary, all kind of food and drink events are celebrated, but fried rice is the first thing on the menu. Even this is a quick recipe to make on a busy day.

Everyone makes it more or less at home but I want to share with you my easy Veg Fried Rice recipe.

Ingredients and substitute

All the ingredients needed to make Veg Fried Rice recipe for approximate 6 people:

500 grams of basmati rice- I used basmati rice. But you can use any long and thin rice. Avoid short fat rice its turn sticky after cooking.
5 spoons of ghee- After mixing vegetables with rice, spread ghee lightly on top. The smell of ghee will add more flavors to the Fried Rice.
150 grams of carrots- Veg Fried Rice is not complete without carrots. It contains various nutrients. And it helps to increase our brain power.
100 grams of capsicum- I used a fresh capsicum. Its flavor brings a different taste to Fried Rice.
50 grams of peas- Peas is rich in protein and it is good for health.
100 grams of beans- Beans are high in fiber. It keeps the heart healthy and helps reduce cholesterol.
4 green chilies- I used four chilies. But you can use as much as spicy you like.
4 small cardamoms
4 cloves
2 small pieces of cinnamon
2 bay leaves
Amount of cashews
Amount of raisins
Amount of refined oil
Salt of taste
50 grams of sugar

Expert tips

  • While soaking the rice, it should be careful that the rice not get too wet and split. I have used basmati rice, it just soaks for fifteen to twenty minutes.  If the rice is soaked, the rice becomes longer.
  • After the water boils well in the pot, rice should be add.
  • Be careful not to overcook the rice. If the rice is overcooked, add a little oil while boiling. Then open the lid of the container, it should be cooled immediately.
  • The vegetables should not be fried too much, it will lose the crunchiness of the vegetables.

 

How to make Veg Fried Rice?

Many people cook stale rice to make fried rice but I preferred to make Veg Fried Rice with fresh rice. After cooking it’s tasty better than stale rice and also healthy to eat.

  1.  First wash the basmati rice and soak it for 30 minutes.Veg Fried Rice
  2. All vegetables should be thinly sliced and peel the peas and take out the peas from the inside.Veg Fried Rice
  3. Put water in a pot, add cardamom, cloves, cinnamon, and bay leaf and let the water boil. Veg Fried RiceWhen the water boils well, let the rice soaked in it boil. And add salt and little bit of cooking oil along with it, it will make the rice neatly.Veg Fried Rice
  4. When the rice is boiled, the excess water of rice should be removed.
  5. Then take a pan, fry all the vegetables one by one with salt in sufficient amount of cooking oil.Veg Fried Rice
  6. After the vegetables are fried, mix them with the rice. And spread about 4 spoons of ghee lightly on the Veg Fried Rice.
  7. An important step you have to do, make a sugar powder in a mixer jar. Then spread the powdered sugar over the rice. Then gently mix with rice for five minutes.
